Base Ingredients
- Fresh oysters (half shell): 24 pcs
- Neutral oil (vegetable/sunflower): 2 tbsp
Option 1: Grilled Oysters with Cheese
Ingredients
- Mozzarella or cheddar cheese (grated): 200–220g
- Unsalted butter (optional): 30g (small cubes)
- Black pepper: to taste
Cooking Instructions
- Preheat grill or oven to 200–220°C.
- Arrange oysters on a baking tray (flat side down).
- Add a small piece of butter (optional), then top each oyster with cheese.
- Grill/bake for 8–10 minutes until cheese is melted and lightly golden.
- Sprinkle a little black pepper. Serve hot.
Option 2: Grilled Oysters with Spring Onion Oil
(or Peanut Topping)
- A) Spring Onion Oil
Ingredients
- Spring onions (finely chopped): 6 stalks
- Neutral oil: 6 tbsp
- Fish sauce: 1½ tbsp
- Sugar: ¾ tsp
Cooking Instructions
- Heat oil until hot (not smoking).
- Pour hot oil over spring onions.
- Stir in fish sauce and sugar.
- B) Peanut Topping
Ingredients
- Roasted peanuts (crushed): 80–100g
- Spring onions (optional, finely chopped): 2 stalks
Grilling Method (for both toppings)
- Spoon spring onion oil or sprinkle peanut topping onto each oyster.
- Grill at 200–220°C for 6–8 minutes until oysters are just cooked and fragrant.
- Do not overcook – oysters should remain juicy.
